Warm your soul with the fanstastic “caldos”

Very popular (and tasty!) are the soups and stews “caldos” that hail straight from the countryside. These stews kept the country folk warm on cold, rainy days and quelled their hunger after a long day’s work on the farm.

Galician stew, “caldo gallego” is a soothing mixture of broth, greens, potatoes, white beans with a piece of ham or pork. “Callos” are another stew that is heavier with chickpeas "garbanzos." Another rich, protein-packed stew is the “fabada” made of white beans “fabas.” Lentil stew is also popular “lentejas.”
