Getting in your greens

Just as Santiago has loads of delicious meats to offer, vegetables are also a chief part of the Atlantic Diet. Many small farms grow their own produce and sell it at the open market at the Plaza de Abastos. It’s worth a visit!

You’ve got onions, leeks, artichoke, and many leafy greens: collard greens “berzas” and “grelos,” cabbage “repollo,” carrots “zanahorias.” Peppers “pimientos,” specifically the fried green Padrón peppers “pimientos de Padrón” sprinkled with rock salt are a well-loved and addicting local dish. Pepper frenzy: I have seen tourists and locals go crazy over these "pimientos de Padrón."
